This is EXACTLY what they serve in my workplace canteen (a biotech late stage startup) and they also call it pizza.
Obviously that’s not a pizza, which I think should include as necessary criterium to be made with leavened dough .

I worked in a fine dining restaurant and for some insane reason their “pizza” was made useing two tortilla shells. To this day it baffles me. Like…tortilla. then cheese. Then another tortilla. Then sauce. Then cheese and toppings.
They were making gnocchi by hand daily but their pizza was wraps ordered from a food supplier.
